Three Recipes from the New Book: "Raw & Beyond"
Dear Friends, Today we share with you three recipes and the Table of Contents from the new book, Raw & Beyond. This book is available now only for pre-order and will be mailed during the first week of January
PURPLE SALAD
1/4 head red cabbage, thinly sliced
1 grated carrot
1 grated Fuji apple
4 stalks of celery, chopped
1 pint blueberries
1 avocado, mashed
Juice of 1 lemon
1 tablespoon flaxseed, ground
1 tablespoon dulse flakes
Combine all the ingredients except the dulse flakes and flaxseed in a large bowl. Sprinkle the dulse flakes and freshly ground flaxseed on top and serve.
SERVES 2
ROSEMARY RAIN SOUP
3 sprigs rosemary
2 stalks celery, chopped
1/2 bunch escarole
2 ripe tomatoes, cut in large pieces
1 cucumber, chopped
Juice of 3 limes
1 large avocado, peeled and seeded
3 cups water
1 tablespoon dulse flakes
Thoroughly blend all the ingredients except the dulse flakes together in a blender. Serve sprinkled with dulse flakes.
SERVES 4
VALYA’S SILLY-YUM SORBET
2 cups fresh orange juice
1 frozen banana
1 cup frozen strawberries
1 cup frozen cherries
4 tablespoons psyllium husk powder
Place all the ingredients in a high-speed blender. Using a tamper, blend thoroughly on low or medium speed. It is not necessary to blend this sorbet on maximum speed. Also, using a low or medium speed will be easier on your blender. Have glasses ready to pour the sorbet into as soon as it is done blending, as the psyllium is a thickener and will quickly firm up.
Decorate with fresh berries.
