I believe because the fat has been cleaned it is less likely to go rancid and with the meat and berries both being dried and then preserved in hot fat there's less liklihood of bacteria contamination, could be wrong of course. Lean meat, as stated before the body requires fat to break down the proteins in lean meat, in a fat free or reduced fat diet the fat used for this purpose comes from our own bodies, this works well in modern life, but take it to a survival situation and you require that extra layer of fat for your own body, to burn for warmth or for other internal processes. Therefore if you do not add fat to your diet you will use up your internal stores that much faster, your body basically consuming itself, you have less energy, are less tollerant of cold and disease and so on. Eating organ meats, We've been told to always be very careful of eating carnivores, foxes, wolves or anything else which consistently eats meat. They tend to pick up more disease then the herbivores, they are also at the top of the food chain and pick up any toxins the herbivores have eaten as well. The liver is where much of this stuff is stored before being got rid of. Even in cattle and other domestic herbivores I've got to wonder just what is in the package of liver besides liver, what chemicals has that animal consumed and deposited there. The liver stores all the poisons, the kidneys also assist in the illimination of toxins from the body, so consider what you're eating.
