FREEZING
OKRA
Select young, tender, green pods. Wash thoroughly. Cut
off
stems in such a way as not to cut open seed cells.
Water
Blanch:
Small
pods........................ 3 minutes
Large
pods........................ 4 minutes
Cool promptly in cold water and drain well.
Leave whole or slice crosswise.
Pack into containers, leaving 1/2-inch headspace. Seal,
label
and freeze.
